Suji Ka Halwa is the classiceveryday sweet North Indian sweet made with fine semolina, or cream of wheat (farina) sugar, ghee, almonds and cardamom powder. Away from Maharashtra the state of Maharashtra, this sweet is called as Sheera. Semolina is called as suji, sooji or rava. This delicious halwa recipe melts in the mouth comes together in about 15 minutes. The recipe I am sharing is a recipe from our family which we've been cooking for a long time during family gatherings celebrations, special occasions and holidays.

Suji Halwa is also referred to in the form of Rava Sheera in Western India and Rava Kesari in South India. The process of making it is pretty similar, with a few ingredients that are different from time to time.
Although semolina or rava is the primary ingredient. In some variations there is milk added instead of water and is known"milk-kesari". In order to flavor, typically, cardamom powder is usually added.
This halwa is also made for a special occasion or a pooja ceremony. It could also be for a celebration like Diwali, Ganesh Chaturthi or the religious celebration that takes place at your house or need to indulge in something sweet. It can also be used as breakfast for the morning or dessert after a meal.
Because this is a simple and quick halwa recipe, there is no excuse or reason to cook it. I frequently make sooji halwa as a Bhog or the naivedyam that is offered to the deities.
We always make Suji halwa with puri during the Navami festival during the Navratri festival. Kala chana too is made. On this day we offer Kala chana, suji halwa and puri to the girls of the smallest age (kanjak) who represent the Goddess Mother.
The rava Kesari that are popularin South India typically comes with a synthetic orange color added. However, you can make the same, with natural coloring agents like threads of saffron or saffron powder.

Sooji Halwa Proportions
Sooji Halwa recipe is commonly used in large quantities during festive or religious occasions. If you're planning to make huge quantity the recipe, there's a certain proportion you have to adhere to.
The ratio of suji to sugar to water to Ghee is 1:1:2:0.5 in the measurement of a glass or cup. I slightly alter the ratio and add a bit less ghee and sugar.
- Sugar For 1 cup of sooji I will add 2/3 to 3/4 cup sugar. Therefore, the suji Halwa is less sweet or is more sweet. The sugar in 1 cup provides an extremely sweet taste.
- Ghee Add 2/3 cup ghee to 1 cup suji. For me, 2/3 cup is the ideal amount of Ghee. Cut down or add more ghee in case you prefer.
- Water I use 2.5 cups water for 1 teaspoon of suji. It is possible to include 2 cups water. The amount of water you add can also be increased depending on the quality of the rava and for those who prefer the consistency of a pudding.

- Water I added 2.5 cups of water to one cup suji. You can also make 2 cups with water. The quantity of water could be increased according to the quality of the rava as well as in case you desire the consistency of a pudding.
